Tuesday nights mean raw bar poké bowls. Not your sous-standard London fare of wishy-washy 'ahi', clean-living, anaemicly beffudled crocks; but raw, ripe, realness. Bold flavour on black rice: cured fish, raw pickled veg, fully fermented sauce.

JoOrs is resident mix engineer at The Rushes; once a week we go from riding racks to pots and pans with these LA cut, Korean inspired, water creature comforts.
